The Saviour of the Tradition
The majestic
shade of the Vulture mountain, the giant described by the Roman poet
Orazio, stands out solemnly and silently over the olive groves, particularly
fertile because of the volcanic soil.
In Ripacandida,
in the quiet fields rocked by the Spring breeze, groves of centuries
old olive trees with silvery emerald foliage continue to bear
fruit, that in the Fall mist will give copiously their nectar : the
Gialloro extra virgin olive oil.
The Ogliarola
del Vulture, the typical olive variety cultivated by expert hands and
pressed as in the tradition by stone wheels , has been giving since
Roman times the integrity of genuine extra virgin oil of yellow greenish
colour , rich in golden reflections.
The extra virgin
olive oil comes from a special selection and processing of the olives,
hand picked and cold pressed. The oil, enjoyed on fresh salads
or tasty bruschetta, bursts a harmonic and full taste. Then a soft smell
tells our hearts of the blue and clear sky of the ancient Lucania, a
generous land of thousands of years of agricultural tradition.
The olive pressing
facility is highly qualified to give an extra virgin olive oil of excellent
quality. The production passages are simple and take place with
mechanical tools, without using any chemical additives or substances.
The scrupulous
respect of every phase of the processing, accompanied by twenty years
experience in producing extra virgin olive oil, as well as the use of
only the local olive, Ogliarola del Vulture, guarantees fond customers
an excellent quality oil on their tables daily.
The extra virgin
olive oil produced by Candida Olearia enjoys the DOP Vulture as well
as the Organic certifications.
OUR PRODUCTION EXTRA VIRGIN OLIVE OIL
AGLIANICO DEL VULTURE
The Wine
Cellar was born in the first months of the year 2000.
It has a working
capacity of about 3 tons of grapes.
The grape fermentation
takes place in stainless steel containers at controlled temperature
and with mechanized filling.
Later, the
wine is transferred into stainless steel tanks, where it stays for 12
months. Then the wine goes into oak barrels, particularly, in 500 litres
tonneau of French oak Allier Macon, as well as in 225 litres barrique
of French oak Troncaise Millesime. The wine ages in these barrels
for 12 months. Afterwards it is bottled, and ten months later
it is labelled.
The wine comes
exclusively from Aglianico grapes grown on the 12 hectares vineyard
located in the Mezzana, Mensa, San Pietro and Giardino rural districts,
on the Ripacandida Municipality hills , the altitude of which goes from
400 meters above the sea level of the Mezzana district, to 660
meters of the Mensa one.
All the Aglianico
vineyards are located on the volcanic clay soil of the slopes of the
Vulture mountain.
On the same
hills of Vulture and precisely in the Carpinello rural district,
are also located the two hectares of Moscato grapes, from which it comes
the Bianco IGT Basilicata Candida Latinorum and the Sparkling Moscato.

The Candida
Olearia has been established in 1989, in order to provide the
service of extracting oil from the olives grown by local producers.
In 1995, besides
producing extra virgin olive oil in bulk, the company has been equipped
with machinery for packaging the oil in glass bottles of different sizes
as well as in aluminium tins, thus starting to commercialise it under
the trade mark “Gialloro”.
In 2002 the
company has enlarged the operation by constructing a new and modern
facility in the artisan zone of the Ripacandida Municipality. This facility
houses the new olive press, the filling and bottling line of both the
extra virgin olive oil and the aromatised one. The facility also includes
a small line for the production and bottling of the Aglianico del Vulture
DOC and the Basilicata IGT wine.
The company
policy is based on the production of small quantities of extremely high
quality oil and wine, devoting the maximum attention to all particulars.
The selection of the best olives and grapes allows having an excellent
quality product at a fair price.
The company
is located in the Northern area of the Basilicata Region of Italy and
precisely in the vicinity of the extinct volcano named Vulture.
One can admire
the landscape, with a view of flourishing olive trees and
orderly rows of grapevines stretching into the distance.
Here the olive
trees and the Aglianico grapevines are in their natural habitat,
and thus are able to give their best, thanks also to the nourishment
from the volcanic soil.
The fruits
are selected with great attention by the expert harvesting people, in
order to have excellent quality while maintaining the purity of this
land.
The extra virgin
olive oil produced by the Candida Olearia enjoys the recognition of
Vulture DOP as well as the Organic certification.
These certifications
are an additional guarantee to customers, who for years have appreciated
the authenticity and the goodness of Candida Olearia oil and wine.
