The Salumificio (a factory producing sausages) is situated in S. Agata d'Esaro in the heart of the Pollino and in the valley of Esaro, in the Calabria Region of Italy.

The products are free from whatever kind of preservatives or colouring agents, and are made from national pork only, with the addition of spices from high mountains, such as wild fennel, pepper and chili pepper.

The "Salumificio" is, on one side, the ideal partner for distributors and catering companies, and on the other, attention is payed to the evolution of the market and the demand of consumers with a delicate palate.

A careful process of maturing and curing, the duration of which varies according to the kind of products, is carried out.

The work is done with the approval of the Office of the Health, benefiting the EEC stamp. To this end the following controls are implemented:
- chemical and microbiologic analysis;
- quality control of the raw material entering;
- quality control during the workmanship;
- quality control of the final product.
